The Sear: Heat a cast-iron skillet over medium-high heat. You don’t even need oil—the bologna has plenty of its own! Fry the slices for 2–3 minutes per side until the edges are dark and crispy.
The Melt: As soon as you flip the bologna, place your cheese slice on top so it gets perfectly gooey while the second side finishes. ![]()
The Toast: While the meat is sizzlin’, butter your bread and toast it in the same pan (or a separate one) until golden brown.
The Assembly: Slather one side of the bread with mayo and the other with plenty of yellow mustard. Pile on your crispy bologna and cheese, add your pickles, and top it off!
