In the South, we call this the “Working Man’s Steak.” If you grew up here, you know the sound of a thick slice of bologna hitting a hot cast-iron skillet is the sound of a good lunch on the way! ![]()

This isn’t your average cold deli sandwich. We’re frying it until the edges are crispy and charred, then topping it with plenty of melty cheese and a classic Southern “zing.”
INGREDIENTS
The Star: 2-3 thick slices of Bologna (Ask the deli to cut them 1/4 to 1/2 inch thick—no thin slices here!)
The Bread: White Bread or a Brioche Bun (must be buttered and toasted!)
The Melty Goodness: 1-2 slices of Sharp Cheddar or American Cheese
The Tang: * Yellow Mustard (The traditional choice!)
Mayonnaise (Duke’s, of course)
The Crunch: Bread & Butter Pickles or a handful of Potato Chips (put them inside the sandwich for that extra crunch!)
