In a mixing bowl, whisk together the egg, milk, vanilla extract, and melted butter until smooth.
Add the flour, sugar, and baking powder. Stir just until everything is combined and a soft, slightly sticky dough forms. Don’t overmix, or the doughnuts may become dense.
Heat about 1–2 inches of oil in a deep skillet or saucepan over medium heat. The oil should be hot enough that a small piece of dough rises and gently bubbles when added.
Using two small spoons or a small cookie scoop, carefully drop small portions of dough into the hot oil. Work in batches so you don’t overcrowd the pan.
Fry the mini doughnuts for a few minutes, turning them occasionally, until they’re puffed and golden brown on all sides.
Remove them with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
While they’re still warm, toss the doughnuts in granulated sugar until evenly coated.

Tip: Keep the doughnut pieces small because they puff up considerably as they fry. Maintain a steady medium temperature so the outside doesn’t brown too quickly while the inside remains undercooked.
