Step 1: Add the Ingredients to the Blender
Add the cottage cheese, eggs, rolled oats, baking powder, honey, vanilla extract, cinnamon, and salt to a blender.
Make sure all the ingredients are evenly distributed before blending.
Step 2: Blend Until Smooth
Blend everything for approximately 30–60 seconds until you get a thick, smooth batter.
The mixture should be creamy and slightly thicker than traditional pancake batter.
If it seems too thick, add 1–2 tablespoons of milk and blend again.
Step 3: Let the Batter Rest
Allow the batter to rest for approximately 5 minutes.
This gives the oats time to absorb some moisture and helps create thicker, fluffier pancakes.
Step 4: Heat the Pan
Place a nonstick skillet or frying pan over medium-low heat.
Lightly grease the surface with butter or coconut oil.
Avoid using high heat because these pancakes need a little extra time to cook through without burning.
Step 5: Pour the Pancake Batter
Pour approximately 2–3 tablespoons of batter into the pan for each pancake.
Spread gently into small, round circles.
Leave enough space between the pancakes so you can flip them easily.
Step 6: Cook the First Side
Cook for approximately 2–3 minutes.
You’ll notice small bubbles forming on the surface and the edges beginning to look set.
When the bottoms are golden brown and the pancakes hold their shape, they’re ready to flip.
Step 7: Flip and Cook the Other Side
Carefully slide a spatula underneath each pancake and flip.
Cook for another 1–2 minutes until the second side is golden brown and the center is fully cooked.
Repeat with the remaining batter, adding a little more butter or oil to the pan if necessary.
Step 8: Stack and Serve
Transfer the cooked pancakes to a serving plate.
Stack them while warm and drizzle with honey or maple syrup.
Add fresh strawberries, blueberries, banana slices, or a spoonful of yogurt for a delicious finishing touch.
