Creamy Chocolate Custard

Step 1: Heat the Milk and Cream

In a medium saucepan, combine the milk and heavy cream.

Heat over medium heat until steaming but not boiling.

Step 2: Prepare the Egg Mixture

In a separate bowl, whisk together:

  • Egg yolks
  • Sugar
  • Cornstarch
  • Salt

Whisk until smooth and pale.

Step 3: Temper the Eggs

Slowly pour about ½ cup of the hot milk mixture into the egg mixture while whisking constantly.

Gradually add another ½ cup, continuing to whisk.

Step 4: Cook the Custard

Pour the tempered egg mixture back into the saucepan.

Cook over medium-low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon, about 5–7 minutes.

Step 5: Add the Chocolate

Remove from heat.

Add the chopped chocolate and vanilla extract.

Stir until completely melted and silky smooth.

Step 6: Strain (Optional)

For an extra-smooth custard, strain through a fine-mesh sieve into a clean bowl.

Step 7: Chill

Divide among serving dishes.

Cover with plastic wrap pressed directly onto the surface to prevent a skin from forming.

Refrigerate for at least 3 hours.
