Cheesy Vegetable Casserole – Easy Oven-Baked Vegetable Slice

Step 1: Prepare the Vegetables

Wash the cabbage, carrots, and zucchini thoroughly.

Finely shred the cabbage and place it in a large mixing bowl.

Peel and grate the carrots, then grate the zucchini using the large holes of a box grater.

Finely chop the onion, green onions, parsley, and dill.

Add everything to the bowl with the cabbage.

Step 2: Season the Vegetables

Sprinkle the vegetables with salt and black pepper.

Mix thoroughly to distribute the seasonings.

If the zucchini releases too much liquid, gently squeeze out the excess moisture using your hands or a clean kitchen towel. This helps prevent the casserole from becoming watery.

Step 3: Prepare the Creamy Batter

In a separate large bowl, crack the eggs and whisk until combined.

Add the milk, yogurt, and olive oil.

Whisk everything together until smooth.

Step 4: Add the Dry Ingredients

Gradually add the flour, baking powder, garlic powder, paprika, salt, and black pepper.

Whisk until you have a smooth, thick but pourable batter without lumps.

Add the mozzarella and cheddar cheese, then stir gently.

Step 5: Combine Everything

Pour the creamy batter over the prepared vegetables.

Using a large spoon or spatula, mix until all the vegetables are evenly coated.

Make sure the batter reaches the bottom of the bowl and covers the ingredients well.

Step 6: Prepare the Baking Dish

Preheat your oven to 375°F (190°C).

Lightly grease a rectangular baking dish with olive oil or butter.

Transfer the vegetable mixture into the dish and spread it evenly.

Sprinkle the remaining mozzarella cheese over the surface.

Step 7: Bake Until Golden

Place the baking dish in the preheated oven.

Bake for approximately 35–40 minutes, or until the casserole is completely set in the center and the top becomes beautifully golden brown.

If you want a deeper golden crust, turn on the broiler for the final 2–3 minutes, watching carefully to prevent burning.

Step 8: Add Fresh Herbs

Remove the casserole from the oven.

Brush the top lightly with melted butter if desired, then sprinkle with freshly chopped dill or parsley.

Allow it to rest for 10–15 minutes before cutting. This helps the casserole hold its shape.

Step 9: Slice and Serve

Cut the casserole into equal-sized squares or rectangles.

Arrange the pieces on a serving platter and serve warm.

The result is a delicious combination of tender vegetables, creamy cheese, and a golden, lightly crispy top!
