Blueberry Cream Cheese Loaf

1️⃣ Preheat & Prepare

  • Preheat oven to 180°C (350°F)
  • Grease and line a loaf pan with parchment paper

2️⃣ Make the Cream Cheese Filling

  • In a bowl, beat:
    • cream cheese
    • sugar
    • egg
    • vanilla
  • Mix until smooth and creamy, then set aside

3️⃣ Prepare the Batter

  • In a bowl, whisk:
    • flour
    • baking powder
    • baking soda
    • salt
  • In another bowl:
    • Cream butter + sugar until light and fluffy
    • Add eggs one at a time
    • Mix in vanilla
  • Gradually add dry ingredients alternating with milk

4️⃣ Add Blueberries

  • Toss blueberries with 1 tbsp flour (prevents sinking)
  • Gently fold into the batter

5️⃣ Assemble the Loaf

  • Pour half of the batter into the pan
  • Add the cream cheese mixture evenly
  • Top with remaining batter
  • Optional: swirl gently with a knife for a marble effect

6️⃣ Bake

  • Bake for 50–60 minutes
  • Check with a toothpick (should come out mostly clean)

7️⃣ Cool & Serve

  • Let cool in pan for 10–15 minutes
  • Transfer to a rack and cool completely before slicing

✨ Tips for the Perfect Loaf

  • Use room temperature ingredients for a smoother batter
  • Don’t overmix—keeps the loaf soft
  • Frozen blueberries? No need to thaw
  • Add a sprinkle of sugar on top before baking for a light crust

🍽️ Optional Glaze (Extra Delicious!)

Mix:

  • ½ cup powdered sugar
  • 1–2 tbsp milk
  • drizzle over cooled loaf
