1. Preheat oven

  • Set oven to 190°C (375°F)
  • Grease a muffin tin well (important to avoid sticking)

2. Mix the base

  • In a bowl, whisk:
    • Eggs
    • Heavy cream
    • Melted butter

3. Add cheese

  • Stir in Parmesan and mozzarella
  • Add salt and pepper
  • Mix until thick and combined

4. Fill molds

  • Spoon mixture into muffin cups (about ¾ full)

5. Bake

  • Bake for 15–20 minutes until:
    • Tops are golden
    • Edges are crispy

6. Cool & serve

  • Let cool 5 minutes before removing
  • Enjoy warm for best crispiness
