Zero-Carb Carnivore Bread — Soft, Fluffy and Amazing

1. Prepare the oven

Preheat your oven to 175°C (350°F).

Grease 4–6 small oven-safe bowls, ramekins, or muffin cups with butter or tallow.

2. Separate the eggs

Carefully separate the egg whites from the yolks, placing them in two clean bowls.

This step is important because the whipped whites are what give the bread its incredible fluffy texture.

3. Make the yolk mixture

Add the softened cream cheese, melted butter, salt, and baking powder to the egg yolks.

Whisk until completely smooth and creamy.

4. Whip the egg whites

Using an electric mixer, beat the egg whites until they form stiff peaks.

The whites should be thick and fluffy enough that they don’t slide around when the bowl is gently tilted.

5. Combine gently

Add about one-third of the whipped egg whites to the yolk mixture and gently fold them in.

Then fold in the remaining whites in two additions.

Don’t stir aggressively. Keep as much air in the mixture as possible.

6. Fill the cups

Divide the batter between the prepared cups, filling them about ⅔–¾ full.

Sprinkle a few poppy seeds on top if desired.

7. Bake

Bake for approximately 20–25 minutes, until the tops are beautifully golden and the centers are set.

Avoid opening the oven during the first 15 minutes, as a sudden temperature change can cause the bread to collapse.

8. Cool

Remove from the oven and let the bread cool for 5–10 minutes.

The bread may puff dramatically while baking and then settle slightly as it cools—this is normal.

Slice the fluffy bread and enjoy it with:

  • Butter
  • Scrambled or fried eggs
  • Ground beef
  • Steak
  • Bacon
  • Cheese, if dairy fits your diet

For a delicious breakfast, toast the slices lightly in a skillet with butter until the edges become golden and crisp.

If you’re following a strict carnivore diet, omit the poppy seeds and choose dairy according to your preferred version of carnivore eating.
