Vegetable & Cheese Fritters

1. Prep the vegetables

Grate all the vegetables. Then squeeze out excess water, especially from the zucchini and potatoes—this step is key for crispy fritters.

2. Make the mixture

In a large bowl, combine vegetables, eggs, cheese, garlic, flour, and spices. Mix well until you get a thick batter.

3. Heat the oil

Add oil to a pan and heat over medium heat.

4. Shape the fritters

Scoop a spoonful of the mixture into the pan and flatten slightly.

5. Cook

Fry for 3–4 minutes per side until golden brown and crispy.

6. Drain

Place on paper towels to remove excess oil.
