Turkish bread

1. Activate & mix

In a large bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.

2. Form the dough

Add flour, salt, and olive oil. Mix and knead for about 8–10 minutes until soft and slightly sticky.

3. First rise

Cover and let the dough rise in a warm place for 1 hour, or until doubled in size.

4. Shape the bread

Transfer dough to a baking tray lined with parchment. Gently stretch into a round or oval shape (about 2–3 cm thick).

5. Create the pattern

Using your fingers, press lines across the dough to form a diamond grid pattern—this is the signature look!

6. Add topping

Mix egg yolk, yogurt, and olive oil. Brush generously over the surface. Sprinkle sesame and nigella seeds.

7. Second rise

Let it rest for 15–20 minutes while the oven preheats to 220°C (430°F).

8. Bake

Bake for 12–18 minutes until golden brown and slightly crisp on top.
