Stove Top Stuffing Meatloaf

Add the ground beef and cooled onion-garlic mixture.

Using clean hands or a large spoon, gently combine everything until just incorporated.

High-protein cooking tip: Avoid compacting or kneading the meat excessively. Gentle mixing keeps the finished meatloaf tender.

6. Shape the meatloaf

Transfer the mixture into the prepared loaf pan.

Press it gently into the corners and smooth the top.

Do not pack it down aggressively.

7. Add the first glaze

Spread approximately ¼ cup of ketchup over the top.

Keep the layer relatively thin so it caramelizes instead of becoming watery.

8. Bake

Place the loaf in the center of the 375°F (190°C) oven.

Bake for approximately 40–45 minutes.

The meatloaf should begin browning and the edges should look firm.

9. Add the final glaze

Remove the meatloaf from the oven and spread the remaining ¼ cup ketchup over the top.

Return it to the oven for another 15–20 minutes.

Visual cue: The glaze should become glossy, dark red, and lightly caramelized around the edges.

10. Check the center

Use an instant-read thermometer inserted into the thickest part of the meatloaf.

Cook until the center reaches the appropriate safe internal temperature for ground beef.

Avoid relying solely on the exterior color because the glaze can brown before the center is fully cooked.

11. Rest

Remove the meatloaf from the oven and let it rest for 10–15 minutes.

This allows the juices to redistribute and the loaf to firm up.

12. Slice and serve

Carefully remove the meatloaf from the pan if desired.

Slice into 8 even portions using a sharp knife.

Garnish with fresh parsley and serve warm.
