Purslane: The Humble Plant Often Mistaken for a Weed

Growing quietly between stones, in gardens, and along sidewalks, purslane is one of those plants that many people overlook. Yet this small succulent has been eaten as a vegetable in many parts of the world for generations.

Purslane has tender, slightly crunchy leaves and a mild, refreshing flavor with a subtle lemony note. It can be eaten raw, cooked, or added to soups, salads, and simple homemade dishes.

One of the reasons purslane attracts attention is its nutritional profile. The leaves provide vitamins, minerals, fiber, and plant compounds, and purslane is also known for containing alpha-linolenic acid, a plant-based omega-3 fatty acid.

A Simple Purslane Salad

Ingredients:

  • 2 cups fresh purslane leaves and tender stems
  • 1 tomato, chopped
  • ½ cucumber, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • A small pinch of salt
  • A little black pepper
  • Fresh parsley or mint, optional
