Melt-in-Your-Mouth Apple Cake

  1. Preheat your oven to 180°C (350°F).
  2. Grease or line a baking pan with parchment paper.
  3. Peel and dice the apples into small cubes.
  4. In a large bowl, beat the eggs and sugar until light and fluffy.
  5. Add the milk and vanilla, mixing well.
  6. Sift in the flour and baking powder and stir until smooth.
  7. Fold in the diced apples.
  8. Pour the batter into the prepared pan.
  9. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let cool, then dust generously with powdered sugar.
  11. Cut into squares and serve.
