Step-by-Step Instructions
1. Add the egg
Place the egg in a tall, narrow container suitable for an immersion blender.
2. Add the remaining ingredients
Add the lemon juice, mustard, salt, and optional garlic.
3. Pour in the oil
Slowly pour the oil over the ingredients without stirring.
4. Blend
Place the immersion blender directly over the egg yolk and begin blending. Keep the blender still for about 10–15 seconds until the mixture at the bottom starts turning thick and creamy.
5. Slowly lift the blender
Once the bottom has emulsified, slowly move the blender upward while continuing to blend. Keep blending until all the oil is incorporated and the mayonnaise becomes smooth and thick.
6. Taste and adjust
Taste your mayonnaise and add a little more lemon juice or salt if desired.
7. Chill and serve
Transfer the homemade mayonnaise to a clean container and refrigerate. Use it with sandwiches, burgers, potato salad, coleslaw, vegetables, or as a dip.
