Step 1: Prepare the ingredients

Peel the fresh ginger and slice it thinly so it releases its flavor more easily during cooking. Peel and dice the onions, mince the garlic if using, and cut the stale bread into small cubes.

Prepare the chicken broth and keep all the ingredients close to the stove.

Bring the mixture to a gentle boil, then reduce the heat to low. Cover partially and simmer for 20–25 minutes, stirring occasionally, until the ginger is tender and the bread has softened completely.

Step 6: Blend the soup until smooth

Remove the saucepan from the heat and allow the soup to cool slightly. Use an immersion blender to blend everything until smooth and creamy.

If using a countertop blender, work in small batches and follow the manufacturer’s hot-liquid safety instructions. Never seal hot soup in a blender without allowing steam to escape.

If the soup is too thick, add a little extra broth or hot water until you reach your desired consistency.

Step 7: Season and finish

Return the blended soup to low heat. Season with salt and freshly ground black pepper to taste.

For a richer texture, stir in a few tablespoons of cream if desired. Warm gently for another 2 minutes without allowing the soup to boil vigorously.

Add chopped fresh parsley just before serving.

Allow the soup to cool slightly, then transfer it to airtight containers and refrigerate within two hours. It will generally keep for 3–4 days in the refrigerator.

Reheat gently in a saucepan over medium-low heat, stirring occasionally. Add a little broth or water if it has thickened during storage. The soup can also be frozen for up to 2–3 months for best quality.

Is Ginger Soup a Natural Alternative to Antibiotics?

Ginger contains compounds such as gingerols that have been studied for their biological and anti-inflammatory properties. A warm ginger soup can be comforting and can contribute to fluid intake, but there is no reliable evidence that ginger soup is 100 times more effective than antibiotics or can replace them.
