1. Slice the Potatoes
Wash and dry the potatoes thoroughly.
Slice them into rounds about ¼-inch thick. Try to keep the slices as even as possible so they cook at the same rate.
2. Soak the Potatoes
Place the potato slices in a bowl of cold water and let them soak for 15–20 minutes.
This helps remove excess starch and encourages a crispier exterior.
3. Dry Thoroughly
Drain the potatoes and pat them completely dry with clean kitchen towels or paper towels.
This step is important because excess moisture can prevent the potatoes from becoming crispy.
4. Season
Place the potato slices in a large bowl.
Add olive oil, minced garlic, Italian seasoning, paprika, garlic powder, onion powder, salt, and black pepper.
Toss until every slice is evenly coated.
5. Preheat the Air Fryer
Preheat your air fryer to 400°F (200°C) for about 3 minutes.
6. Air Fry
Arrange the potato slices in the air fryer basket in a single layer. Avoid overlapping them too much; cook in batches if necessary.
Air fry for 12–18 minutes, flipping the slices halfway through.
Continue cooking until the potatoes are golden brown and crisp around the edges.
7. Add Parmesan
During the final 2–3 minutes, sprinkle the Parmesan cheese over the potato slices.
Return them to the air fryer until the cheese is melted and lightly golden.
8. Garnish and Serve
Transfer the crispy potatoes to a serving plate.
Sprinkle with fresh chopped parsley and, if desired, a pinch of red pepper flakes.
Serve immediately while they’re hot and crispy.
Serving idea: These potatoes are delicious with ranch dressing, garlic aioli, sour cream, ketchup, or a creamy Parmesan dipping sauce.
