1. Prepare the oven
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. Cook the beef
Heat a large skillet over medium heat. Add the ground beef and chopped onion.
Cook for 6–8 minutes, breaking the beef apart, until browned and the onion is tender. Drain any excess grease.
3. Season the filling
Stir in the breadcrumbs, barbecue sauce, chili powder, salt, and black pepper.
Cook for another 2–3 minutes, allowing the flavors to combine.
4. Add the corn
Stir the corn into the beef mixture and remove from the heat.
5. Prepare the potatoes
In a bowl, combine the mashed potatoes, sour cream, garlic powder, and black pepper. Mix until creamy and smooth.
6. Assemble
Spread the beef mixture evenly across the bottom of the prepared baking dish.
Spoon the mashed potatoes over the beef and carefully spread them into an even layer.
7. Add the cheese
Sprinkle the shredded cheddar evenly over the potatoes.
8. Bake
Bake uncovered for 25–30 minutes, until the casserole is hot and the cheese is melted and golden.
For a deeper golden crust, broil for 1–2 minutes at the end, watching closely.
9. Rest and serve
Let the casserole rest for 5–10 minutes before serving.
Serve warm with a simple green salad, steamed vegetables, or extra barbecue sauce on the side.

For an extra “cowboy” flavor, add cooked bacon, diced jalapeños, or a little smoked paprika to the beef mixture.
