Classic French Crêpes

Step 1: Prepare the Dry Ingredients

In a large mixing bowl, add the all-purpose flour, sugar, and salt. Whisk everything together until evenly combined.

Step 2: Add the Eggs

Make a small well in the center of the flour mixture. Crack in the two eggs and begin whisking gently, gradually incorporating the flour from the sides.

Step 3: Add the Milk

Slowly pour in the milk while continuously whisking. Adding the milk gradually helps prevent lumps and creates a smooth batter.

Step 4: Add Water and Butter

Pour in the water and melted butter. Add the vanilla extract if desired. Whisk until the batter becomes smooth, thin, and pourable, similar to light cream.

Step 5: Let the Batter Rest

Cover the bowl and allow the batter to rest at room temperature for 20–30 minutes. This helps the flour hydrate and produces softer, more tender crêpes.

Step 6: Heat the Pan

Place a nonstick frying pan or crêpe pan over medium heat. Lightly grease it with a little butter, wiping away any excess.

Step 7: Cook the First Crêpe

Pour approximately ¼ cup of batter into the center of the hot pan. Immediately tilt and rotate the pan in a circular motion to spread the batter into a thin, even layer.

Step 8: Cook Until Golden

Cook for approximately 45–60 seconds, until the edges begin to lift and the bottom develops light golden-brown spots.

Step 9: Flip Carefully

Slide a thin spatula underneath the crêpe and gently flip it. Cook the other side for another 20–30 seconds until lightly golden.

Step 10: Repeat

Transfer the cooked crêpe to a plate. Lightly butter the pan again if necessary and repeat with the remaining batter, stacking the crêpes as you go.

Tips for Perfect French Crêpes

  1. Always let the batter rest before cooking for a softer texture.
  2. Make sure the batter is thin enough to spread easily around the pan.
  3. Use medium heat to prevent the crêpes from browning too quickly.
  4. Avoid adding too much butter to the pan.
  5. Whisk the batter again if it separates while resting.
  6. For extra-smooth batter, strain it through a fine-mesh sieve before cooking.
  7. Stack the cooked crêpes on a plate and cover them with a clean kitchen towel to keep them warm and soft.

How to Store Homemade Crêpes

Refrigerator: Allow the crêpes to cool completely, stack them with parchment paper between each one, and store them in an airtight container for up to 3 days.

Freezer: Place parchment paper between the crêpes and freeze them in a freezer-safe bag for up to 2 months.

Reheating: Warm them individually in a nonstick pan over low heat for a few seconds on each side.
