Chicken Avocado Cobb Salad

1. Prepare the Chicken

If the chicken isn’t already cooked, season the chicken breasts with salt and pepper and cook them in a skillet over medium heat until completely cooked through.

Allow the chicken to rest for a few minutes before slicing it into strips.

2. Prepare the Eggs

Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat and cook for about 9–12 minutes.

Transfer the eggs to cold water, allow them to cool, peel them, and cut them into quarters.

3. Prepare the Vegetables

Wash and dry the lettuce thoroughly, then chop it into bite-sized pieces.

Slice the avocado, halve the cherry tomatoes, thinly slice the red onion, and cut the cucumber into pieces.

4. Make the Dressing

Add the olive oil, lemon juice, apple cider vinegar, Dijon mustard, garlic, and optional honey to a small jar.

Season with salt and pepper, close the jar, and shake vigorously until the dressing is well combined.

5. Assemble the Salad

Spread the lettuce across a large serving platter or bowl.

Arrange the sliced chicken, avocado, eggs, tomatoes, bacon, cucumber, and red onion over the lettuce.

Sprinkle the crumbled cheese and fresh parsley over the top.

6. Add the Dressing

Drizzle the dressing over the salad just before serving.

You can toss everything together or leave the ingredients arranged separately for a beautiful presentation.

7. Serve

Serve immediately while the ingredients are fresh.

For meal preparation, keep the dressing separate until you’re ready to eat. This helps prevent the lettuce from becoming soggy.

This salad is especially satisfying because it combines protein from chicken and eggs, fiber from vegetables, and healthy fats from avocado and olive oil. For a lighter version, use less bacon and cheese while keeping plenty of vegetables and chicken.
