1 egg
500ml (2 cups) of water
800g (6 3/8 cups) flour
2 tbsp olive oil
1kg boiled potatoes
50g butter
1/2 tsp salt
1/2 tsp black pepper
250g cheese (of your choice), grated or sliced
140g salami slices (optional)
Method:
In a bowl, mix together the egg, olive oil, water, flour, and salt to form a dough. Give the dough ten minutes to rest.
In another bowl, mix the boiled potatoes with butter, salt, and pepper. Mash the potatoes until well combined.
