Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Lightly grease a standard muffin tin with butter or nonstick cooking spray to prevent the egg muffins from sticking.
Step 2: Prepare the Fillings
Cook the bacon in a skillet over medium heat until crispy and golden.
Transfer it to a paper towel-lined plate to remove excess grease. Once cooled, chop it into small pieces.
Finely chop the green onions and parsley. Set everything aside.
Step 3: Prepare the Egg Mixture
In a large mixing bowl, crack all 8 eggs.
Add the milk, garlic powder, onion powder, salt, and black pepper.
Whisk everything together until the eggs are completely combined and slightly frothy.
Step 4: Add the Cheese and Vegetables
Add the shredded cheddar cheese, chopped green onions, parsley, and cooked bacon to the egg mixture.
Stir gently until all the ingredients are evenly distributed.
Step 5: Fill the Muffin Tin
Divide the bacon, cheese, and green onion mixture evenly among the prepared muffin cups.
Pour the beaten egg mixture into each cup, filling approximately ¾ full to leave room for the muffins to rise.
If necessary, sprinkle a little extra shredded cheese and green onion over the tops.
Step 6: Bake Until Golden
Place the muffin tin in the preheated oven.
Bake for approximately 20–25 minutes, or until the egg muffins are puffed, lightly golden, and completely set in the center.
To check if they’re ready, insert a toothpick into the center. It should come out without liquid egg mixture.
Step 7: Cool and Remove
Remove the muffin tin from the oven and allow the egg muffins to cool for about 5 minutes.
Carefully run a small knife or spatula around the edges and gently lift each muffin out.
Transfer them to a serving plate.
Step 8: Serve and Enjoy!
Serve warm, garnished with additional chopped green onions or fresh parsley.
These savory egg muffins are delicious on their own or alongside toast, fresh fruit, roasted potatoes, or a light breakfast salad.
