BRUSCHETTA CHICKEN PASTA

This Bruschetta Chicken Pasta combines juicy seasoned chicken, sweet tomatoes, fresh basil, garlic, and tender pasta in a light, flavorful sauce. It’s a fresh Italian-inspired dinner that’s perfect any night of the week.

Ingredients

For the Chicken

  • 2 large chicken breasts, sliced into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Pasta

  • 12 oz (340 g) penne or rotini pasta
  • Water and salt for boiling

For the Bruschetta Topping

  • 4 large Roma tomatoes, diced
  • 3 cloves garlic, minced
  • ¼ cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional Garnish

  • Fresh Parmesan cheese
  • Extra basil leaves
  • Balsamic glaze drizzle
