1. Prepare the cabbage
Preheat your oven to 400°F (200°C).
Remove any damaged outer cabbage leaves. Cut the cabbage into thick slices, about 1–1½ inches (2.5–4 cm) thick.
2. Prepare the seasoning
In a small bowl, combine the olive oil, garlic powder, onion powder, paprika, oregano, salt, and black pepper.
3. Season the cabbage
Arrange the cabbage slices on a parchment-lined or lightly greased baking sheet.
Brush both sides generously with the seasoned olive oil. Sprinkle with Parmesan if using.
4. Bake
Roast for approximately 25–30 minutes.
Carefully flip the cabbage steaks halfway through cooking and brush with a little more seasoned oil if needed.
5. Get them golden
For extra caramelized edges, increase the oven temperature to 425°F (220°C) for the final 5 minutes, keeping a close eye on them.
6. Serve
Remove from the oven and let them cool for a couple of minutes. Serve warm as a side dish or light meal.
