1. Cook the bacon
Place the bacon in a skillet over medium heat. Cook for 4–6 minutes per side, or until crispy and golden. Transfer to a paper towel-lined plate.
2. Toast the bread
Lightly butter both sides of the bread. Toast the slices in a skillet over medium heat until golden brown and crisp.
3. Cook the eggs
Crack the eggs into a bowl and whisk with salt and black pepper. Melt a little butter in the skillet, then pour in the eggs. Cook gently, stirring occasionally, until softly scrambled and just set.
4. Add the cheese
Divide the eggs into four portions and place a slice of cheese over each portion. Cover the skillet for about 30 seconds, allowing the cheese to melt.
5. Assemble the sandwiches
Spread mayonnaise on the toasted bread if desired. Place the cheesy eggs on four slices of toast, then pile 2 slices of crispy bacon on each sandwich.
6. Finish and serve
Top with the remaining slices of toasted bread. For extra flavor, add a few drops of hot sauce before closing the sandwich.
