These vegetable and cheese fritters are the perfect quick recipe—crispy on the outside, soft and cheesy on the inside. Great as a snack, appetizer, or even a light meal with a fresh salad.

  • 1 carrot (grated)
  • 1 small zucchini (grated and well drained)
  • 1 small onion (finely chopped)
  • 2 eggs
  • 100 g shredded cheese (cheddar, mozzarella, or a mix)
  • 3–4 tablespoons flour
  • 1 garlic clove (minced)
  • Salt and black pepper
  • ½ teaspoon paprika (optional)
  • Fresh parsley or cilantro (optional)
  • Oil for frying
