1. Garlic Butter Chicken Skewers 🧄🧈
Prep Time: 20 minutes
Marinating Time: 30 minutes
Cook Time: 12–15 minutes
Servings: 4
Ingredients
- 900 g chicken breast or boneless chicken thighs, cut into chunks
- 1 red bell pepper, cut into squares
- 1 yellow bell pepper, cut into squares
- 1 zucchini, sliced thickly
- 1 red onion, cut into chunks
- 4 tbsp butter, melted
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped
- Wooden or metal skewers
Instructions
Step 1: Prepare the chicken.
Cut the chicken into evenly sized chunks so the pieces cook at approximately the same rate.
Step 2: Make the garlic butter marinade.
In a large bowl, combine the melted butter, minced garlic, olive oil, paprika, Italian seasoning, salt, and black pepper. Mix well.
Step 3: Marinate the chicken.
Add the chicken pieces to the bowl and toss until thoroughly coated. Cover and refrigerate for 30 minutes.
Step 4: Prepare the vegetables.
Cut the bell peppers, zucchini, and red onion into pieces similar in size to the chicken.
Step 5: Assemble the skewers.
Thread the chicken and vegetables onto the skewers, alternating the ingredients to create colorful combinations. Avoid packing the pieces too tightly.
Step 6: Preheat the grill.
Heat the grill to medium-high and lightly oil the grates. If using wooden skewers, soak them in water for 20–30 minutes beforehand.
Step 7: Grill the skewers.
Cook for approximately 12–15 minutes, turning every 3–4 minutes. Brush with any reserved marinade before cooking it, or use fresh garlic butter for basting.
Step 8: Check for doneness.
Ensure the thickest chicken pieces reach an internal temperature of 74°C (165°F).
Step 9: Garnish and serve.
Sprinkle with fresh parsley and serve immediately with rice, grilled potatoes, salad, or garlic sauce.
