Prep Time: 25 minutes
Marinating Time: 30 minutes
Cook Time: 12–18 minutes
Servings: 4

Ingredients

  • 300 g beef sirloin, cut into cubes
  • 300 g boneless chicken breast, cut into cubes
  • 300 g large shrimp, peeled and deveined
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced thickly
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • Salt to taste
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges for serving

Instructions

Step 1: Prepare the seasoning.
Mix the olive oil, garlic, lemon juice, paprika, Italian seasoning, black pepper, and salt in a bowl.

Step 2: Season the beef and chicken.
Divide the seasoning mixture between the beef and chicken in separate bowls. Toss to coat and refrigerate for 30 minutes.

Step 3: Season the shrimp separately.
Use a clean bowl and a portion of the seasoning mixture to coat the shrimp. Refrigerate for 10–15 minutes.

Step 4: Prepare the vegetables.
Cut the peppers, onion, and zucchini into evenly sized pieces.

Step 5: Assemble the skewers.
For more even cooking, prepare separate beef, chicken, and shrimp skewers, with vegetables added to each. This allows you to remove the shrimp before the beef or chicken if they finish cooking sooner.

Step 6: Preheat the grill.
Heat to medium-high and lightly oil the grates.

Step 7: Grill the beef.
Cook the beef skewers, turning regularly, until browned and cooked to your preferred doneness. Whole beef cubes should reach at least 63°C (145°F), followed by a 3-minute rest.

Step 8: Grill the chicken.
Cook the chicken skewers for approximately 12–15 minutes, depending on the size of the pieces, until the thickest pieces reach 74°C (165°F).

Step 9: Grill the shrimp.
Cook the shrimp skewers for approximately 6–8 minutes, turning halfway through, until the shrimp are opaque and reach 63°C (145°F).

Step 10: Finish and serve.
Arrange the skewers on a serving platter, sprinkle with fresh parsley, and add lemon wedges. Serve with rice, couscous, roasted potatoes, or grilled vegetables.

Tips for Perfect Loaded Skewers

  • Cut ingredients evenly: Uniform pieces help everything cook more consistently.
  • Marinate safely: Always marinate meat and seafood in the refrigerator.
  • Avoid overcrowding: Leave a little space between ingredients to help them brown.
  • Soak wooden skewers: Soak them in water for 20–30 minutes before grilling to reduce burning.
  • Use separate utensils: Keep raw meat and seafood separate from cooked food.
  • Make extra sauce safely: Reserve a portion before adding raw meat, or prepare a fresh batch for serving.
  • Check temperatures: Use a food thermometer rather than relying only on color.
  • Choose your cooking method: These skewers can also be prepared on a grill pan or under a hot oven broiler, turning regularly until cooked through.
