Instructions

Step 1: Prepare the marinade.
In a large bowl, combine olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and black pepper.

Add the drumsticks and coat them thoroughly. Let them marinate for 20–30 minutes in the refrigerator if time permits.

Step 3: Bake the chicken.
Preheat the oven to 200°C (400°F). Place the drumsticks in a baking dish and bake for 40–50 minutes, turning halfway through, until golden and cooked through.

Step 4: Prepare the rice.
Rinse the rice under cold water. Heat the olive oil in a saucepan and sauté the chopped onion for 2–3 minutes.

Step 5: Cook the rice.
Add the rice and stir for one minute. Pour in the chicken broth or water, season lightly with salt, and bring to a boil. Cover, reduce the heat to low, and simmer for 15–18 minutes, or according to the package instructions. Let it rest for 5 minutes before fluffing with a fork.

Step 6: Cook the vegetables.
Toss the carrot, zucchini, and broccoli with olive oil, salt, and pepper. Roast on a separate tray for approximately 20–25 minutes, or steam until tender.

Step 7: Plate the meal.
Serve the lemon herb chicken over fluffy rice with the colorful vegetables on the side. Finish with fresh parsley and an extra squeeze of lemon juice.

6. Creamy Garlic Mushroom Chicken Drumsticks with Fettuccine 🍄🍝

Prep Time: 15 minutes
Cook Time: 50–60 minutes
Servings: 4

Ingredients

For the chicken:

  • 900 g chicken drumsticks
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste

For the mushroom cream sauce:

  • 250 g mushrooms, sliced
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon butter
  • 250 ml heavy cream
  • 150 ml chicken broth
  • 40 g grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh parsley

For the pasta:

  • 300 g fettuccine
  • Water for boiling
  • Salt to taste

Instructions

Step 1: Season the chicken.
Pat the drumsticks dry. Season with paprika, thyme, salt, and black pepper.

Step 2: Brown the drumsticks.
Heat olive oil and butter in a large, oven-safe skillet over medium-high heat. Add the chicken and brown for approximately 3–4 minutes per side. Transfer to a plate.

Step 3: Cook the mushrooms.
In the same skillet, add the sliced mushrooms and chopped onion. Cook for 5–7 minutes, stirring occasionally, until the mushrooms release their moisture and begin to brown.

Step 4: Add the garlic.
Stir in the minced garlic and cook for 30–60 seconds until fragrant.

Step 5: Make the creamy sauce.
Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Add the heavy cream, Parmesan cheese, and dried thyme. Stir until combined and season to taste.

Step 6: Cook the chicken.
Return the drumsticks to the skillet and spoon some sauce over them. Cover and simmer gently for approximately 30–40 minutes, or transfer the oven-safe skillet to a preheated oven at 190°C (375°F) for approximately 30–40 minutes. Check that the thickest part of each drumstick reaches 74°C (165°F).

Step 7: Boil the fettuccine.
While the chicken cooks, bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Drain, reserving a little pasta water.

Step 8: Finish the sauce.
If the sauce is too thick, stir in a little chicken broth or reserved pasta water. Sprinkle with fresh parsley.

Step 9: Serve.
Arrange the fettuccine on plates, top with the creamy mushroom sauce, and serve the chicken drumsticks alongside. Finish with extra Parmesan and freshly ground black pepper.

Tips for Perfect Chicken Drumstick Dinners

  • Dry the chicken first: Patting the skin dry helps it brown more effectively.
  • Use a thermometer: Chicken drumsticks should reach an internal temperature of at least 74°C (165°F) for food safety.
  • Avoid overcrowding: Leave space between the drumsticks to encourage even cooking.
  • Keep the skin crispy: If you prefer crispy skin, bake the chicken uncovered and avoid pouring too much sauce over it before cooking.
  • Plan your side dishes: Prepare rice, mashed potatoes, pasta, or vegetables while the chicken cooks to save time.
  • Store leftovers safely: Refrigerate cooked chicken and side dishes within two hours in airtight containers. Reheat thoroughly before serving.
