Yorkshire Puddings

Ingredients:

1 cup flour
4 eggs
3/4 cup milk
6 teaspoons lard or vegetable oil
1/2 teaspoon salt
1/2 teaspoon pepper

Instructions:

Mix the eggs and flour in a small bowl fitted with a pour spout.
Stir in the milk and whisk the mixture until just combined. It’s okay if the batter is a little lumpy.
Refrigerate the batter for a minimum of 30 minutes or up to overnight.
Preheat the oven to 425 degrees
Add 1/2 teaspoon of oil or lard to each hole of a 12-count muffin tin.
Place the muffin tin in the preheated oven for 10-12 minutes to heat the oil or lard.
Take the batter out of the refrigerator and add the pepper and salt.
Working quickly, take the hot muffin tray out of the oven and fill each hole equally with batter right away.

. Return the pan to the oven as fast as possible.
Cook the Yorkshire puddings for 16-18 minutes or until they are puffy and golden brown.
Remove the Yorkshire puddings from the oven and serve them hot.
