Wet Burritos

Ingredients:

1 pound ground beef
1/2 cup chopped onion
2 teaspoons minced garlic
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
4.5 ounces diced green chile peppers
16 ounces refried beans
8 ounces tomato sauce
10 ounces enchilada sauce
15 ounces chili (no beans)
6 flour burrito tortillas (about 12 inches)
2 cups shredded lettuce
3 cups shredded Mexican blend cheese
Chopped green onions (for garnish)
Any additional desired toppings

Instructions:

Preheat the oven to 400 degrees .
In a skillet, brown the ground beef and chopped onion over medium-high heat. Cook and stir until the beef is evenly browned and the onion begins to soften.
Drain the excess grease from the skillet, and season the beef and onion with minced garlic, cumin, salt, and pepper. Stir in the diced green chile peppers and refried beans until well blended. Keep the mixture warm.
Put the chili, enchilada sauce, and tomato sauce in a skillet. Whisk together until well mixed, and heat over medium heat until warmed through. Keep the sauce warm.
Divide the beef and bean mixture into 6 portions in the skillet.
Place a burrito-sized tortilla on a plate and spoon 1/6 of the ground beef mixture onto the center. Top with a little cheese and lettuce. You can omit the lettuce if you prefer not to bake it inside. You can add or replace with other veggies as you choose.
Fold in the left and right sides of the tortilla over the filling, holding it in place with your fingers. Then, to ensure that no filling escapes, fold in the top and bottom edges of the tortilla over the filling.
Repeat with the remaining 5 tortillas.
Place the filled tortillas seam side down in two greased 9×13-inch oven-safe dishes.
Over the top of the burritos, pour the entire saucepan of sauce.
Sprinkle the remaining shredded cheese evenly over the top.
Bake in the preheated oven for 15-20 minutes, or until the burritos are heated through and the cheese is melted.
Serve the burritos topped with more lettuce, tomato, sour cream, dried chives, or any other desired toppings.
