Ultimate Potato Roll

 

Ingredients:

For the Potato Layer:

3 large potatoes (about 900g)
300g grated cheddar cheese
2 tablespoons (20ml) vegetable oil
4g salt

For the Beef Filling:

500g ground beef
2 tablespoons (20ml) vegetable oil
1 onion, finely chopped
3 green peppers, diced
1 red pepper, diced
3 garlic cloves, minced
2 tablespoons (25g) tomato sauce
1 teaspoon (20g) tomato paste
Paprika, black pepper, cumin (to taste)
Chopped parsley (optional, for garnish)

Instructions:

Preheat your oven to 200°C (392°F).
After peeling, cut the potatoes into thin rounds.

In a bowl, toss the potato slices with 2 tablespoons of vegetable oil and 4g of salt until evenly coated.
Place the potato slices in a single layer on a parchment paper-lined baking sheet.
Bake in the preheated oven for 30 minutes or until the potatoes are tender and slightly golden.
Heat two tablespoons of vegetable oil in a pan over medium heat while the potatoes are roasting.

Add the chopped onion, green and red peppers, and minced garlic to the skillet. Sauté until they become soft.
Add the ground beef to the skillet and turn the heat up to medium-high. Using a spoon, shred the meat while it cooks until it turns brown.

Add the salt, black pepper, cumin, paprika, tomato sauce, and tomato paste and stir. Simmer for five more minutes to let the flavors combine.

Remove the skillet from heat and stir in the chopped parsley (if using).
After baking, allow the potatoes to cool somewhat.
Arrange the potato pieces, overlapping, on a sanitized surface.
Spread the beef filling evenly over the potato slices.
Sprinkle grated cheddar cheese over the beef filling.
Carefully roll the potato slices, creating a roll shape with the beef filling in the center.
Slice the potato roll into individual portions.
Garnish with chopped parsley, if desired.
