Ingredients:
For the Cake:
1 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
1/2 cup vegetable oil
4 large eggs
1 teaspoon vanilla extract
1 teaspoon coconut extract
2 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup coconut milk
1/2 cup crushed pineapple, drained
For the Frosting:
8 ounces cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
1/2 teaspoon coconut extract
For Garnish:
Toasted coconut flakes
Maraschino cherries
Pineapple slices
Directions:
Preheat your oven to 350°F (175°C). Butter and dust three 9-inch circular cake pans.
In a large bowl, beat together the sugar, butter, and oil until light and fluffy. Add the eggs one at a time, beating well after each addition. A Stir in the vanilla and coconut extracts.
In a separate bowl, combine the flour, baking powder, and salt. Add the dry ingredients to the wet mixture gradually, beginning and finishing with the flour mixture and alternating with the coconut milk.. Fold in the crushed pineapple.
Using the prepared cake pans, distribute the batter equally. When a toothpick put into the center comes out clean, bake for 25 to 30 minutes.
. After allowing the cakes to cool in the pans for ten minutes, move them to a wire rack to finish cooling.
For the frosting, beat the cream cheese and butter together until smooth. Add the powdered sugar gradually while beating until fully blended and creamy.
Stir in the vanilla and coconut extracts.
Spoon a layer of icing over one cake layer that has been placed on a serving platter.. Repeat with the remaining cake layers and frosting, creating a layered cake.
Arrange pineapple slices, maraschino cherries, and toasted coconut flakes as cake garnishes.
Before slicing and serving, the cake should be chilled for a minimum of one hour.
