Texas-Style Beef Sausage Rolls with Jalapeño and Cheddar

Ingredients:

2 pounds ground beef
1 tablespoon olive oil
1 onion, finely diced
1/3 cup bread crumbs
4 jalapeño peppers, deseeded and diced
Six ounces of coarsely chopped sharp or medium cheddar
1 1/2 teaspoons kosher salt
1 1/2 teaspoons coarsely ground black pepper
3 (10-inch) sheets puff pastry, thawed
1 egg, beaten

Instructions:

Preheat the oven to 375 degrees F
In a small pan set over medium heat, warm the olive oil.
. Add diced onions and cook for 10-15 minutes until browned, stirring frequently. Allow the onions to cool.
In a large bowl, combine ground beef, cooled onions, bread crumbs, diced jalapeños, diced cheddar cheese, kosher salt, and black pepper. Mix gently but thoroughly, being careful not to overwork the meat.
Lay one sheet of puff pastry on a board or work surface. Use one-third of the beef mixture to form a log down the center of the pastry.
Fold one side of the pastry over the beef mixture, then brush the edge with the beaten egg to create a “glue.”
Continue folding the pastry roll until it is fully encased, ensuring the edges line up on the egg-glued line. Press the pastry lightly to ensure a good seal. Repeat these steps with the remaining puff pastry sheets and beef mixture.
Flip each beef roll so that the seam side is facing down, then cut each roll into 6-8 pieces.
Place the pieces onto a sheet pan and bake for 30-35 minutes, or until the pastry is golden brown. To guarantee even browning, you might need to turn the tray halfway through baking.
Before serving, let the sausage rolls cool slightly.
