Ingredients:
Filling:
Five cups of peeled and chopped peaches (fresh or frozen)
2 cups all-purpose flour
1 cup sugar
1 cup whole milk
4 teaspoons baking powder
1 teaspoon sea salt
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 teaspoon nutmeg
Topping:
3/4 cup brown sugar
3/4 cup sugar
3 tablespoons unsalted butter
3 cups water
1/2 teaspoon nutmeg
Optional Garnish:
Ice cream, whipped cream, or cool whip
Preparation:
Preheat the oven to 400ºF (200ºC) and lightly grease a 9×13-inch (23×33 cm) baking dish with butter or non-stick spray.
In a large saucepan over medium heat, whisk together the brown sugar, sugar, and nutmeg. Mix in the butter and water, and bring the mixture to a boil, stirring until the sugar is fully dissolved. Remove from heat and set aside.
In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until combined.
Whisk in the milk and vanilla extract until smooth, then fold in the diced peaches.
Pour the peach filling into the greased baking dish, spreading it out evenly.
Pour the topping mixture over the filling, distributing it evenly.
Place the baking dish in the preheated oven and bake for 50-55 minutes, or until the pudding is cooked through. Cover with foil if the top begins to brown too soon.
Remove the Tennessee Peach Pudding from the oven and let it cool for 15 minutes before serving.
Serve the warm peach pudding as is or with a scoop of ice cream, dollop of whipped cream, or cool whip as a garnish, if desired.
