Ingredients:
2 pounds lean ground beef
2 (1.25 ounce) packages taco seasoning mix
4 cloves garlic, minced
1 tablespoon chili powder
1/2 teaspoon cayenne pepper
1/2 cup water
Cooking spray
18 (6-inch) corn tortillas
1 (24-ounce) jar salsa
1 cup sliced green onions
1 (16-ounce) container sour cream
1 1/2 cups shredded Cheddar cheese
1 1/2 cups shredded Monterey Jack cheese
Instructions:
Place the ground beef in a large, deep skillet and cook over medium-high heat until evenly browned. Drain any excess grease.
Season the ground beef with taco seasoning, minced garlic, chili powder, and cayenne pepper. After adding the water, lower the heat, and simmer for ten minutes.
Preheat the oven to 375 degrees Fahrenheit . Grease the bottom of a 9×13-inch baking dish with cooking spray.
Place 6 corn tortillas into the prepared baking dish.
Arrange a third of the salsa over the tortillas.
Spread half of the meat mixture evenly over the salsa.
Drizzle the meat with half of the cut green onions.
Randomly drop dollops of half of the sour cream over the green onions.
Top with 1/2 cup of shredded Cheddar cheese and 1/2 cup of shredded Monterey Jack cheese.
Repeat the layers with 6 more tortillas, 1/3 of the salsa, the remaining meat mixture, green onions, sour cream, Cheddar cheese, and Monterey Jack cheese.
Finish with the remaining 6 tortillas and the remaining 1/3 of the salsa on top.
Bake in the preheated oven for 30 to 45 minutes, or until the top is golden brown and the cheeses are melted throughout the layers.
Remove from the oven and let cool slightly before serving.
