Spinach Garlic Meatballs Stuffed with Mozzarella

Ingredients:

Spinach:

8 ounces fresh baby spinach
3 cloves garlic, finely chopped
1-2 tablespoons olive oil

Meatballs:

1 pound ground beef
1 pound ground pork
2 1/4 cups bread crumbs
3 (or 4 if small) eggs
Splash of milk
4 cloves garlic, finely chopped
1/2 cup Parmesan cheese
Salt and pepper to taste
2 tablespoons olive oil
Mozzarella cheese, cut into small cubes
1 jar Rao’s marinara sauce
Instructions:

Spinach:

In a pan over medium heat, warm the olive oil. When the baby spinach is added, toss to coat. Let it wilt for a few minutes.
Once the garlic is aromatic, add the finely chopped garlic to the skillet and sauté it for a further minute or two.
Take off the spinach from the skillet, roughly chop it, and let it to cool.
Meatballs:

Preheat the oven to 350°F (175°C).

Ground beef, ground pork, bread crumbs, eggs, milk, minced garlic, Parmesan cheese, salt, pepper, and the chilled spinach/garlic combination should all be combined in a big bowl.
Using your hand, flatten a little amount of the meat mixture. . Place a small cube of mozzarella cheese in the center and shape the meat mixture into a ball around the cheese, making sure it is fully enclosed .Continue with the remaining cheese cubes and meat mixture.
In a pan over medium heat, warm the olive oil. Brown the meatballs on all sides until they are lightly golden. This stage aids in preserving the tastes.

Place the browned meatballs in a baking dish and pour the marinara sauce over them.
Bake for 20 to 25 minutes, or until the cheese inside has melted and the meatballs are well cooked, in a preheated oven.
