Nine cups of peaches, thinly sliced (about eight fresh peaches, or three pounds)

For the Topping:
2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
12 tablespoons butter, chilled and grated
1/2 cup boiling water
For the Cinnamon Sugar Topping:
1/3 cup granulated sugar
2 teaspoons ground cinnamon
Instructions:
Preparation:
Preheat the oven to 425°F.
Combine the peaches, lemon juice, cornstarch, 1/2 cup sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/2 teaspoon salt in a large bowl.
. Transfer to a 9×13-inch baking dish and bake for 10 minutes.
Making the Topping:
In a clean mixing bowl, combine the flour, 1 cup sugar, baking powder, and salt. Incorporate the grated butter and mix thoroughly.
Quickly stir in the boiling water until just combined (the batter will be lumpy).
Assembling and Baking:
Remove the baking dish from the oven and drop spoonfuls of the topping over the filling.
Mix together the cinnamon and sugar for the topping, then sprinkle over the cobbler.
Bake for 25 to 30 minutes, or until the top is golden brown and the filling is bubbling.
Serving:
Warm cobbler should be served with a dollop of vanilla ice cream.
