Southern Fried Salmon Patties

Ingredients:

1 can (14 3/4 ounces) salmon, drained
1/4 cup finely chopped onion
1/4 cup cornmeal
1/4 cup flour
1 egg
3 tablespoons mayonnaise

Instructions:

Open the canned salmon and drain it thoroughly. Place the drained salmon in a mixing bowl and use a fork to flake it evenly.

Add the finely chopped onion, cornmeal, flour, mayonnaise, and egg to the bowl with the salmon. Once all the components are thoroughly combined, stir the mixture.

Shape the mixture into patties, making them about the size of an average burger or slightly smaller.

Heat oil in a skillet over medium heat. The salmon patties should be gently placed in the skillet after the oil is heated.
Cook the patties until they are browned on each side, turning them once while frying. This should take a few minutes on each side, depending on the thickness of the patties.

Note: The addition of mayonnaise in the recipe helps the patties hold their shape and prevents them from becoming too dry.

Serve the Southern Fried Salmon Patties as a tasty main dish, and enjoy their flavorful and crispy goodness!
