Ingredients:
1 and 1/2 cups all-purpose flour
1/2 cup unsweetened shredded coconut
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Combine the flour, baking powder, shredded coconut, and salt in a mixing dish.
. Set aside.
In a separate bowl, cream the softened butter and granulated sugar together until light and fluffy. You may beat by hand with a wooden spoon or with an electric mixer.
Stir in the egg and vanilla essence after mixing the butter and sugar.. Mix until well combined.
When a soft dough develops, gradually incorporate the dry ingredients into the wet mixture and stir.. Be careful not to overmix.
Using a tablespoon or cookie scoop, drop spoon fuls of dough onto the prepared baking sheet, spacing them a few inches apart.
Gently flatten each dough mound with the back of a spoon or the palm of your hand to create a round biscuit shape.
Bake in the preheated oven for approximately 12-15 minutes, or until the edges of the biscuits are lightly golden.
Remove the baking sheet from the oven and let the biscuits cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
Once the biscuits have cooled, store them in an airtight container at room temperature .They will hold their softness and flavor for several days.
