Soft Butter Cake Recipe

Ingredients:

1 3/4 cups (230 grams/8.1 oz) cake flour
1/2 teaspoon baking powder
1 cup (250 grams/8.8 oz) butter
1 cup (200 grams/7 oz) caster sugar
1 teaspoon vanilla extract
1/4 cup (59 ml) milk

Instructions:

Preheat your oven to 350°F (175°C).You may either butter and flour a 9-inch round cake pan or line it with parchment paper.

In a mixing bowl, sift together the cake flour and baking powder. Set aside.
In a separate mixing bowl, cream the butter and caster sugar together until light and fluffy. You may beat by hand with a wooden spoon or with an electric mixer.

Add the vanilla extract to the butter-sugar mixture and mix until well combined.
Gradually add the sifted dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing after each addition until just combined. Be careful not to overmix.
Pour the batter into the prepared cake pan, spreading it evenly.
When a toothpick placed into the center of the cake comes out clean, bake for around 30 to 35 minutes in a preheated oven.
Remove the cake from the oven and let it cool in the pan for about 10 minutes. Next, transfer the cake to a wire rack to cool completely.
Once the cake has cooled, you can frost it with your favorite frosting or dust it with powdered sugar for a simple finish.
