Ingredients:
1 package sugar cookie mix
1 cup graham cracker crumbs
1/2 cup unsalted butter, melted
1 package brownie mix
1/4 cup brewed coffee (optional)
1/2 cup vegetable oil
2 large eggs
2 cups mini marshmallows
Instructions:
Set the oven to 350°F (175°C) and coat a 9-by-13-inch baking pan with oil.
In a mixing bowl, combine the sugar cookie mix, graham cracker crumbs, and melted butter. Stir until well combined.
Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
As directed on the container, prepare the brownie mix in a separate mixing bowl.. If desired, add brewed coffee to enhance the chocolate flavor.
Pour the brownie batter over the sugar cookie crust in the baking dish, spreading it out evenly.
Bake in the preheated oven for the time specified on the brownie mix package, or until a toothpick inserted into the center comes out with moist crumbs.
Remove the baking dish from the oven and sprinkle the mini marshmallows over the top of the brownie layer.
Return the dish to the oven and broil on low for 1-2 minutes, or until the marshmallows are toasted and golden brown. Observe them closely to avoid burning them.
Remove from the oven and let the S’mores Bars cool completely in the baking dish.
Once cooled, cut into squares and serve.
