Slow Cooker Beef Tips

Ingredients:

1 small onion, sliced
8 oz baby Bella mushrooms, sliced
1 tablespoon extra virgin olive oil
1 pound sirloin steak, cut into strips, excess fat trimmed
Salt and pepper
1 tablespoon Worcestershire sauce
¼ cup dry red wine, plus a splash for deglazing
2 ½ cups fat-free beef broth
2 tablespoons cornstarch
¼ cup cold water

Instructions:

Line the bottom of a 4.5-quart slow cooker with the sliced onions and mushrooms.
In a big skillet set over medium-high heat, warm the olive oil.
. Generously season the steak strips with salt and pepper, then add them to the hot skillet. Sear the meat on all sides for about 3 minutes, but do not cook it through.
Transfer the seared steak to the slow cooker, placing it on top of the onions and mushrooms.
Splash a couple of tablespoons of red wine into the hot skillet and scrape the bottom to remove any browned meat bits. Add this mixture to the slow cooker as well.
Season the beef with pepper once again, then add Worcestershire sauce, red wine, and beef broth to the slow cooker. For 6–8 hours, cook on low with a cover on.
Take off the slow cooker’s lid and gradually stir in the cornstarch and water blend.

. Cover again and cook on high for another 45 minutes or until the gravy has thickened.
Serve the beef tips over brown rice, buttered egg noodles, or mashed potatoes.
