Slow Cooker Beef and Rice Stuffed Peppers

Step 1: Prepare the Peppers

  1. Wash the bell peppers well.
  2. Cut the tops off the peppers and remove the seeds and membranes inside.
  3. Set the peppers aside.

Step 2: Prepare the Filling

In a large bowl combine:

  • Ground beef
  • Cooked rice
  • Chopped onion
  • Garlic
  • Egg
  • Half of the shredded cheese
  • Salt
  • Pepper
  • Paprika
  • Italian seasoning

Mix everything until well combined.

Step 3: Stuff the Peppers

  1. Fill each pepper with the beef and rice mixture.
  2. Press the filling gently so it is packed but not too tight.

Step 4: Prepare the Sauce

In a bowl mix:

  • Tomato sauce
  • Diced tomatoes
  • Worcestershire sauce
  • Beef broth

Stir well.

Step 5: Arrange in the Slow Cooker

  1. Pour a small amount of sauce into the bottom of the slow cooker.
  2. Stand the stuffed peppers upright in the crockpot.
  3. Pour the remaining sauce over the peppers.

Step 6: Cook

Cover and cook:

  • LOW: 6–7 hours
  • HIGH: 3–4 hours

The peppers should be tender and the beef fully cooked.

Step 7: Add Cheese

During the last 10 minutes, sprinkle the remaining cheese on top of each pepper.
Cover again until melted.

Serve 🍽️

Carefully remove the stuffed peppers and serve hot with:

  • Garlic bread
  • Fresh salad
  • Mashed potatoes
  • A little sour cream on top

Garnish with fresh parsley for a beautiful finish.

If you want extra flavor, add ½ teaspoon smoked paprika or a pinch of chili flakes to the filling.
