Roasted Parmesan Creamed Onions

Ingredients:

4 large sweet onions, peeled and sliced 1/2 inch thick
3 tablespoons extra virgin olive oil
1 cup heavy cream
1/4 cup white wine
1/4 cup grated Parmesan cheese
Salt and pepper to taste

Instructions:

Preheat the oven to 375 degrees
. Place the sliced onions into a parchment-lined baking dish, making sure not to separate the rings.
Drizzle the onions with the olive oil and season with salt and pepper.
In a saucepan on the stove, heat the heavy cream and white wine until the cream begins to simmer around the edges. Remove from heat and set aside.
Remove the onions from the oven and transfer them to a baking dish, keeping the rings intact.
Slowly pour the cream mixture over the onions and sprinkle with grated Parmesan cheese.
Place the baking dish back in the oven after securely covering it with foil.
Bake for 20 minutes, then carefully remove the foil and continue roasting for another 5 minutes, or until the onions have started to brown and caramelize.
Remove from the oven and serve.
