Roasted Garlic Mushroom

Ingredients:

16 equal-sized mushrooms, stems cut level
3 tablespoons olive oil or coconut oil
1/4 cup soft unsalted butter
3 cloves of garlic, minced very finely
2 teaspoons chopped fresh thyme
1 1/2 tablespoons lemon juice
Salt and freshly ground black pepper to taste
1/4 cup fresh bread crumbs

Instructions:

Preheat the oven to 200°C/400°F/gas mark 6.
In a hot pan, lightly fry the mushrooms with the lid down for 20 seconds, using the olive oil or coconut oil.
Place the mushrooms with their stems facing up in a small roasting pan.
In a bowl, mix together the soft unsalted butter, minced garlic, chopped fresh thyme, lemon juice, salt, and pepper.
Drizzle a little of the garlic butter mixture over each mushroom, ensuring they are evenly coated.
Gently press the fresh bread crumbs on top of each mushroom.
At this point, you can choose to refrigerate the mushrooms for later use or proceed to cook them immediately.
Place the roasting pan in the preheated oven and roast the mushrooms for about 10 minutes.
Once roasted, remove from the oven and serve.

Note: Depending on the quantity and variety of mushrooms used, the cooking time may change significantly.. Adjust accordingly to ensure the mushrooms are cooked to your desired tenderness.
