Ingredients:
1 head of garlic
1 teaspoon olive oil
2 pounds red potatoes, washed and quartered
Kosher salt
6 tablespoons butter
3/4 cup half and half
Fresh ground pepper
Instructions:
Preheat the oven to 375°F (190°C). Slice the top quarter of an inch from the garlic head. Transfer the head of garlic to a piece of foil, cover it with a thin layer of olive oil, and seal the foil securely.
Roast the garlic in the oven for about 1 hour, until it is soft and golden. Once done, allow it to cool slightly, then squeeze the cloves out of the skin.
Place the quartered potatoes in a large pot or Dutch oven and cover them with cold water. Add 1 teaspoon of salt to the water. Bring the water to a boil and simmer the potatoes for about 15 minutes, or until they are fork-tender.
After draining, put the cooked potatoes back in the saucepan.. Add the roasted garlic cloves to the pot.
In a separate saucepan or in the microwave, gently warm the half and half and butter until the butter is melted.
Pour the warmed half and half and butter mixture into the pot with the potatoes and garlic. Season with salt and pepper.
Mash the potatoes and garlic together until the milk, butter, and garlic are well incorporated, and the potatoes reach a creamy consistency with some lumps.
Garnish with fresh herbs and additional butter if desired.
