INGREDIENTS
2 cups of rice (cooked)
4 eggs
Salt and black pepper to taste
parsley to taste
150 grams of grated mozzarella
1 slice of grated calabrese
3 heaping tablespoons whole wheat flour
1/2 tablespoon baking powder
breadcrumbs for breading
INSTRUCTIONS
In a bowl, combine the cooked rice, two eggs, chopped parsley, and to-taste salt and black pepper. For a minute, stir.
Add the pepperoni and mozzarella grated, wheat flour, and yeast last.
Once again, use your hands to mix until a stiffer dough forms.
Using a spoonful of the dough, form little balls.* If desired, you can open the dough with your hands and load it with mozzarella cubes. As an alternative, just roll the dough into little balls and roll them in flour, then egg beaten into crumbs, whatever order you want.. Fry till golden brown in heated oil, then remove and drain on paper towels.
