1. Preheat the oven
Preheat your oven to 375°F (190°C).
Line a muffin tin with paper liners or lightly grease it with butter or oil.
2. Mix the dry ingredients
In a large bowl, combine:
- Flour
- Sugar
- Baking powder
- Salt
Mix well with a whisk so everything is evenly distributed.
3. Prepare the wet ingredients
In another bowl, whisk together:
- Milk
- Vegetable oil (or melted butter)
- Egg
- Vanilla extract
Mix until smooth.
4. Combine the mixtures
Pour the wet ingredients into the bowl with the dry ingredients.
Stir gently with a spatula until just combined. Do not overmix, or the muffins may become dense.
If desired, fold in chocolate chips, blueberries, or nuts.
5. Fill the muffin cups
Spoon the batter into the muffin cups, filling each about 3/4 full.
6. Bake
Place the muffin tin in the oven and bake for 18–22 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
7. Cool and serve
Remove the muffins from the oven and let them cool for 5–10 minutes before serving.
They are delicious served warm with:
- Butter 🧈
- Honey 🍯
- Jam 🍓
