Ingredients:
2 cups graham cracker crumbs
1/2 cup melted unsalted butter
2 cups crushed pineapple, drained
2 cups shredded coconut
1 can (14 ounces) sweetened condensed milk
1/4 cup pineapple juice
1/4 cup coconut rum (optional)
2 cups whipped topping (such as Cool Whip), thawed
Maraschino cherries, for garnish
Directions:
Melted butter and graham cracker crumbs should be combined in a medium-sized basin. To make the crust, press the ingredients firmly into the bottom of a 9 by 13-inch baking dish.
Combine the shredded coconut, sweetened condensed milk, crushed pineapple, pineapple juice, and coconut rum (if using) in a separate bowl.
Over the graham cracker crust, evenly distribute the pineapple mixture.
Using a spatula, evenly distribute the whipped topping over the pineapple layer.
Place plastic wrap over the baking dish and place it in the refrigerator to set, at least 4 hours.
Add maraschino cherries to the Pina Colada Lush before serving.
Cut into squares and serve chilled.
